I am back east right now Visiting my bestie Pam. She is one of the best cooks I know and has been spoiling me rotten with her delicious  healthy cooking. She made a batch of these insanely delicious Paleo cookies and I went nuts over them ! I asked her  to teach me how to make and to share her recipe with you all. 


What I love about these cookies are they are totally healthy, gluten free, low in sugar and are SUPER easy to make. 


 RECIPE 

INGREDIENCE :


3/4 cup of coconut sugar – Big tree farms  for brand 

1/2 cup coconut oil 

1 egg

1/2 tablespoon of vanilla – Ronald Reginald’s mexixcan vanilla is the best 

2 & 1/8 cup of Almond flour – Honeyville brand 

1/2 teaspoon of baking powder 

1/2 of himalayan sea salt

1 cup of dark chocolate ( add more or less to your liking ) – Scharffen dark chocolate  baking chunks are amazing 

First mix coconut sugar and egg together then blending the rest of ingredients.

Chill in refrigerator and cover with Saran Wrap for 2-24 hours to bring out flavor more 

Preheat over to 350 

Place parchment paper on cookie sheet and dolaps of cookie dough   

Bake at 350 for 10 minutes
